Canola oil (which stands for Canadian oil low acid) is a derivative of rapeseed oil (such an unfortunate name) that contains significantly less erucic acid and therefore less toxic. Because it meets the Food & Drug Administration's minimum requirement of not killing people, it is designated GRAS.
